Mensho Iriko-ya, as the name suggests, is a restaurant that mainly uses iriko (dried sardines). The restaurant has a full-open kitchen, and the food is prepared right in front of your eyes after you order. The deep, rich broth made mainly from fresh iriko caught on Ibukijima Island, the sacred land of iriko, and other domestic ingredients is a perfect match with the aromatic and chewy noodles made from a blend of “Sanuki no Yume whole wheat flour produced in Kagawa Prefecture. Choose from three types of iriko soba: light, thick, and dipping soba to find the iriko soba you prefer.
