The soba noodles at Kotatsu are made with a special broth based on “chicken bones” and “animal ingredients” with a slightly sweet flavor unique to the Seisan region, which is infused with “Ibuki Iriko,” “dried bonito flakes,” and “mackerel flakes,” all of which are well-known as udon stock, and homemade noodles made using the udon noodle manufacturing method.
